Infused Snacks with Paula: Madeleines
ingredients:
10 tbsp cannabutter
2 large eggs
1/2 cup sugar
3 tbsp brown sugar
2 tsp vanilla
1/8 tsp salt
1 1/4 cups flour
1 Madeleine cake pan
instructions
1. Preheat your oven to 375 F
2. Thoroughly grease your pan.(Use a madeleine cake pan!)
3. Melt canna butter, and set aside.
4. In a large bowl combine eggs, sugars, vanilla, & salt. Whisk vigorously & continuously until the mixture is lighter in colour & slightly frothy (about 1 min.)
5. Add flour to the egg mix in three parts, folding gently & ensuring flour is fully incorporated before adding more.
6. Drizzle canna-butter into the batter. Gently fold with a spatula until thoroughly combined. Careful not to over-mix!
7. Drop batter by tablespoons into a pre-greased pan, 3/4 full.
8. Bake for 10 minutes, rotating the pan halfway through.
Madeleines should be light golden brown and spring back when pressed
9. Allow to cool before removing from pan, then allow to fully cool before decorating with a traditional dusting of icing sugar or dipping in chocolate*
* Paula recommends melting chocolate with up to 2 tbsp of oil (use canna oil for extra potency!)
