Infused Snacks with Paula: Madeleines

Indulge in a touch of French elegance with a modern twist—cannabis-infused Madeleines. These classic shell-shaped sponge cakes are known for their light, airy texture and buttery flavour, making them a delightful treat with a hint of sophistication. In this recipe, we’ll walk you through crafting these delectable cakes from scratch, ensuring each bite is perfectly infused and irresistibly delicious. Get ready to elevate your baking with Paula's Madeleines!

ingredients:

10 tbsp cannabutter

2 large eggs

1/2 cup sugar

3 tbsp brown sugar

2 tsp vanilla

1/8 tsp salt

1 1/4 cups flour

1 Madeleine cake pan

 

instructions

1. Preheat your oven to 375 F

2. Thoroughly grease your pan.(Use a madeleine cake pan!)

3. Melt canna butter, and set aside.

4. In a large bowl combine eggs, sugars, vanilla, & salt. Whisk vigorously & continuously until the mixture is lighter in colour & slightly frothy (about 1 min.)

5. Add flour to the egg mix in three parts, folding gently & ensuring flour is fully incorporated before adding more.

6. Drizzle canna-butter into the batter. Gently fold with a spatula until thoroughly combined. Careful not to over-mix!

7. Drop batter by tablespoons into a pre-greased pan, 3/4 full.

8. Bake for 10 minutes, rotating the pan halfway through.

Madeleines should be light golden brown and spring back when pressed

9. Allow to cool before removing from pan, then allow to fully cool before decorating with a traditional dusting of icing sugar or dipping in chocolate*

* Paula recommends melting chocolate with up to 2 tbsp of oil (use canna oil for extra potency!)
