Infused Treats With Paula: Sponge Kiss Sweet Sandwiches
Sponge kiss sandwiches are a delightful treat that combines soft, airy sponge cakes with a sweet filling. ingredients
50g self-rising flour
10g corn starch
3 large eggs, separated
70g white sugar
20g canna-butter, melted
Icing sugar for sprinkling!
* This is a very delicate treat, measure carefully!
and for the filling:
Your fav fruit jam
Stabilized whipped cream
1 tsp unflavoured gelatin
instructions
1. Preheat your oven to 320° F, line two baking sheets with parchment paper.
2. In a medium bowl, sift together corn starch & flour. In a second, very clean bowl, add egg whites & whip with an electric mixer on medium until it forms soft peaks.
3. Turn the mixer to high & add sugar 1 tbsp at a time.
4. Once all the sugar is added, continue whipping for an additional 1-2 mins, until you reach glossy, stiff peaks.
5. Add egg yolks & fold in gently with a whisk. Add flour mix to egg mix, very gently folding with a spatula until ingredients are combined.
6. Add melted & cooled canna-butter, gently folding with a spatula.
7. Scoop & drop batter on to parchment lined baking sheet. Leave 1-2 inches between cookies as they spread while baking.
8. Bake on centre rack for 8 minutes, rotating halfway. Sponges should be brown around the edges. Allow to cool completely. Once cool, dust with icing sugar!
While the sponges cool, it’s time to make filling! Store-bought whip will also do just fine!
filling:
1. First, chill a big metal mixing bowl in your freezer.
(cooled tools will help keep whipped cream from deflating!)
2. In a microwave-safe bowl, sprinkle gelatin into 4 tsp of cold water, mix & let bloom for 4-5 mins.
3. Once ready, microwave in 5-second intervals until fully dissolved & set aside to cool.
4. Grab your chilled bowl & add: a cup of heavy whipping cream, 1/3 cup icing sugar, & 1 tsp vanilla. Using an electric mixer, blend on low speed until soft peaks form. Turn to medium speed & drizzle in liquid gelatin. Once blended, turn your mixer to high until stiff peaks form.

1. Pair cookies & spread jam on one or both sides.
2. Add a dollop of cream to the bottom sponge.
3. Sandwich together & top with fruit!
